Kate Does a Million Handstands
On our trip to Portland, Paul, as the official photographer, captured Kate's many handstands in front of every monument or cool vista. She didn't miss many, and the blood flow to her brain will undoubtedly bring her A's this term. Paul gets the patience award for capturing each shot.
Trip to Portland
We had a blast on our trip to Oregon in our rented Jeep. The best part was the ocean, and we saw all the coastal bridges all the way to Washington. Kate took us all over Portland and one of the highlights was a sushi restaurant that served sushi on an electric train. We ate a lot of good food (loved Trader Joes' mango mochi), went to a movie in a cool theater with footstools, and hit the ground running with work and school the next day when we came home.

Delicious Mystery Pie
(Tastes just like apple pie)
1 c. sugar
1/4 c. brown sugar
1 t. cinnamon
1/4 t. nutmeg
1 T. lemon juice
1/4 t. allspice
2 t. cream of tarter
Pinch of salt
3 T. cornstarch
2 T. butter (brush on after baked)
Zucchini - enough to fill the bottom pie shell
Peel and scoop out seeds of the zucchini. Slice it into apple size slices. Cover with water and boil for 8 minutes. Drain well and mix in remaining ingredients (except butter).
Pour into pie crust and top with second crust (I like the frozen Marie Calendar crusts). Cover edges of crust with tin foil.
Bake 400 degrees for 20 minutes. Turn down oven to 350 degrees and bake for another 20 minutes or until it looks golden brown.
Brush crust with butter and sprinkle with sugar.
Serve with vanilla ice cream.
(If you don’t have allspice, you can use equal amounts of cinnamon, clove, nutmeg, and black pepper)
